Classic Fig Jam
Because figs have a unique refined flavour, I like to keep my fig jam au naturel. Perfectly ripe adriatic figs are cooked to perfection with just enough pure cane sugar, fresh lemon juice and a few drops of Marsala to support their warm flavour.
Traditional Partners: sharp cheese, scones, turkey and prosciutto sandwiches, cream and honey
Unexpected Partners: walnut and orange scones, Marsala, fromage blanc and hazelnuts
